Three years ago..

Three years ago today my husband got down on one knee underneath the Golden Gate Bridge and asked me to be his wife (secretly capturing it all on camera). And I cried like a baby. You can see a teensy bit more about our love story here. We were then greeted and whisked away by a group of our closest friends to spend the day celebrating (and snapping a few engagement photos) in Union Square. Talk about wasting no time! It was the best day of my life.

Today, I love him more than I could have ever imagined on that cool, breezy San Franciscan day. And San Francisco, you will always hold a soft spot in my heart.

Husband of mine, thank you for being the hard-working, loving husband and father that you are! I get giddy at the thought of a lifetime with you. How blessed am I to have met you when I was just seventeen??

We went to Yosemite.

We went to Yosemite and it was gorgeous! But that's sort of to be expected right? What we really fell in love with was a little town outside of Yosemite in June Lake which we stayed in just one night. Just one night, that's all it took. Seriously, it felt like we were in the Swiss Alps or something (not that I have been to the Swiss alps but I imagine it would feel similar). And the people were so kind. A quaint little fishing town, clean crisp air, surrounded by snow capped mountains, and nice people to top it off. What isn't there to love about that? I'm already dreaming about going back. Summer tradition? I hope so.

Our time in Yosemite was short but throughly enjoyed. If you hadn't noticed, Holland also learned how to stick out his tongue, which he almost continually did through our week of travels making for many memorable pictures. ;) And William Cooper, being well, William Cooper couldn't help himself and jumped right into the pool of ice cold water at the bottom of one of the waterfalls. 

Yosemite, we'll be back.

Let's play catch up: we had a party plus a recipe share {party corn}

Mr. Cooper turned 27 and we had a party (like two months ago), but I'll share with you now. It was simple, a few favorite desserts/snack foods. And he said it was the nicest solo (as in not a combined birthday) party he ever had. I am thankful for a simple man. He makes my heart sing.

We also did a lot of other fun things this summer (like went to the Grand Canyon in an RV with two of our closest friends). I've just not been on top of sharing. At all. Sometimes real life just wins.

It's been a few months of summer fun, but we are gearing back into reality now. 

Here are a few photos, and I mean a few from Will's big 2-7. We love you! Happy birthday from the blog world….2 months late.

And here's a recipe for you. Meet party corn. A new favorite of ours. Kettle corn with sprinkles. Because it's just more fun that way.



Kettle Corn With Sprinkles {Party Corn}
Yield: plenty for you and a few to share, varied

Ingredients:
1/4 c. white sugar
1/4 c. vegetable oil
1/2 c. unpopped popcorn kernels
sea salt to taste
sprinkles

Method:
Heat vegetable oil in a large pot over medium/high heat. Toss 3 kernels in. Once all 3 kernels pop, stir in the sugar and the rest of your kernals. Cover. Shake the pot almost constantly to keep the sugar from burning (you can do three seconds on the heat, three seconds off). Once the popping has slowed to every 2-3 seconds, remove pot from heat. Pour into a large bowl, salt and stir, breaking up any large clumps. Sprinkle with your favorite sprinkles. Serve and enjoy.

Note: For a party, divide into small paper bags for individual servings. This would be fun for movie night too! We just used white sack lunch bags and trimmed them down to size.

We celebrated with a backyard bbq surrounded by friends and family. Pie, sliders, mini hot dogs, pb&j, macaroni and cheese and a few other goodies did the trick. We ate and played to our hearts content or rather until nap time hit and all the kids hit a wall within minutes of each other ;) The party actually felt a lot like a marathon. Run, run, run, done!

You are one little man. Way to go.

He loved every second of the birthday song. I wish we had taped it. All giggles and smiles, he may have even clapped for himself.

He's ONE!

One year ago today you came into our lives and there is not a moment I am not thankful for. Happy birthday sweet boy.

Today our Holland is ONE! Today also marks the end of my husband's SIX weeks off (hence my absence). No school, no work, just us. We loved every moment of it. And we enjoyed the last few moments celebrating our Holland's birthday as a family before Will had to headed off to work this afternoon.


Birthday breakfast, the park, and an afternoon cupcake for the little man. And somehow, come cupcake time, not a drop of cupcake anywhere besides his mouth. No squishing, no frosting in the hair, nada. Not even a smudge on his clothes. What?! Not what I expected. He ate it like an old pro and kindly signed to me when he was all done. Seriously, kiddo?

To finish the day, we headed a town over for our little man to spend the rest of his day with his best bud, and grandpa and uncle for an evening visit. I can't wait for party time Saturday. It's sort of like we are celebrating our little man all week and I LOVE it.














Holland Cooper, thank you for making this year the best year of my life. I can no longer imagine life without you, it's as if you've been with us always. You are an absolute gift. You're goofy and sweet, snuggly and mischievous, and a whole lot of boy! I couldn't ask for a better son. Just don't grow up too fast, ok?
