Curried Vegetable Soup
1:34 PMFinally, here is a recipe. It's a crock pot recipe and so easy. We got a crock pot as a wedding gift, and I LOVE it. What is better than coming home from work and having your dinner cooked itself (practically)? I can name a few things, but anyhow it is still pretty cool.
Ingredients:
1 large yellow onion, chopped
1 1/2 cups coarsely chopped celery
1 cup chopped carrot
1 can garbanzo beans
1 to 1 1/2 cups diced tomatoes (I used grape tomatoes sliced in half, since it is what I had)
3 to 4 teaspoons curry powder
2 bay leaves
1/4 teaspoon ground black pepper
6 cups water or vegetable broth for a little extra flavor
That's it! Throw it all in your crock pot, stir, and cook on high for 4 1/2 hours or on low for 9-10 hours. I adapted this recipe from my Better Homes and Gardens-Slow Cooker, Family Dinners cookbook, which is awesome by the way. I loved this soup. I crumbled corn bread in mine. For a more filling soup you could also add lentils, or even small red potatoes (diced) or sweet potato. Yum!
