Recipe share: breakfast {or snack} cookies
6:28 PMI don't know about you, but you don't have to give me a second excuse to eat cookies for breakfast, (or snack, if you prefer) which is why I am sharing this recipe with you. And all you health nuts out there, don't you worry, you can indulge too. These really aren't even that bad for you. Just make sure to get yourself a glass of milk to go with this.
Breakfast Cookies
Yield: about 2 dozen
Ingredients:
3 ripe bananas, mashed
1 tablespoon vanilla
3/4 cup peanut butter
4 tablespoons maple syrup
2 cups rolled oats
1/2 cup whole wheat flour
1 teaspoon baking powder
3/4 cup semi-sweet or dark chocolate chips
coarse salt
*Note: reserve salt for sprinkling the top of each cookie just before baking
Method:
Add each ingredient to kitchen aid stand mixer, one at a time. Mix well. Drop heaping tablespoon-sized balls onto parchment lined baking sheet. Bake at 350 F for 15 minutes. Remove cookies to cooling rack. Enjoy! Or store for later indulgence.
